Crust:
1 package Oreo cookies
2 tbsp melted butter
Crumble 25 cookies in food processor until finely ground. Add melted butter, blend. Cover bottom of 9" springform pan to 3" up the sides.
Filling:
4 8 oz packages cream cheese
5 eggs
1 1/4 cup sugar
2 tbsp flour
1/3 cup heavy cream
1 tsp vanilla
Mix cream cheese, flour, and sugar until smooth. Add eggs one at a time. Beat in heavy cream and vanilla.
Crumble remaining cookies in food processor until coarsely chopped. Finely grind 3-4 cookies for garnish.
Pour half of batter into pan, sprinkle
with cookie crumbs. Pour the rest of the batter. Bake at 425º
for 15 minutes, reduce heat to 225º and bake for 50-55 minutes.
Topping:
1 cup sour cream
1 tbsp sugar
1 tsp vanilla
Mix ingredients, spread over cheesecake. Increase oven temperature to 350 and bake for 7-10 minutes. Cool in oven with the door open. Refrigerate 12 hours or overnight before serving. Sprinkle with finely ground cookie crumbs (or mini Oreos) before serving.
