New York Style Cheesecake

Crust:
1 cup graham cracker crumbs
1/2 cup finely chopped toasted pecans
1/4 cup butter, melted
3 tbsp sugar

Filling:
7 8 oz packages cream cheese
1 cup sugar
1 tbsp vanilla
4 eggs
1/2 cup sour cream

Cream together cheese, sugar and vanilla until smooth. Add eggs, one at a time. Add sour cream. Mix just to blend. Bake at 300º for 2?2 1/4 hours or until top is golden and cake is set around edges. Cool in oven with the door open. Chill 12 hours or overnight before serving.

Real New York cheesecake isn't garnished with anything, but if you must, use fresh fruit.
