Crust:
11 grasshopper cookies, or mint oreos
3 tbsp butter
Crush cookies, add melted butter, mix well. Press into 9" springform pan.
Filling:
3 8oz packages cream cheese
3/4 cup sugar
5 tbsp corn starch
3 eggs
1 egg yolk
2/3 cup creme de menthe
3 cookies, coarsely crushed
Combine cream cheese, sugar, and cornstarch, mix until smooth. Add eggs and yolk one at a time. Add in creme de menthe and vanilla. Stir in crushed cookies. Pour batter into crust. Bake at 350º for 10 minutes. Lower temperature to 200º and bake for 1 hour 10 minutes, until center loses its shine. Cool in oven with the door open. Chill 12 hours or overnight before serving.
Glaze:
1/2 cup semisweet chocolate chips
1 tbsp butter
Melt chips and shortening over low heat, stirring constantly. Spread warm glaze over cheesecake, serve.
