Triple Chocolate Cheesecake

Crust:
1 cup chocolate cookie crumbs
1/4 cup melted butter
3 tbsp sugar

Filling:
3 8oz packages cream cheese
1 cup sour cream
3 eggs, separated
1 cup sugar
2 tbsp corn starch
2 tbsp creme de cacao
1 6oz package semisweet chocolate chips, melted

Sauce:
1 cup semisweet chocolate chips
1/3 cup Kahlua
1/3 cup white Karo syrup

Crust:
Combine ingredients and press into the bottom and 1/4" up sides of springform pan. Chill while making cheesecake.

Filling:
Beat cream cheese, sugar and corn starch until smooth. Add egg yolks one at a time, blending well. Beat egg whites with liqueur until stiff peaks form. Fold into cheese mixture. Swirl chocolate through filling. Pour gently into springform pan. Bake at 350º for 1 hour. Let it cool in the oven with the door open. Chill 12 hours or overnight before serving.

Sauce:
Mix all ingredients in small saucepan. Cook on low until smooth, stirring constantly. Cool to room temp before serving.
