RICE
There are different methods to prepare rice, but the 1st step in each method is to rinse the starch well before using it. Preferable to put in a bowl with hot water and a bit of lemon juice for half an hour and rinse .
BASIC METHOD put rice in hot water bowl with salt and 1 lemon juice for half an hour. rinse well until water is clear and transparent and leave for an hour.
Fry 3 tablespoon oil + 30g' margarine. Add 2 cups rice , salt & paper and stir 2 min. Add 1.5 cups water and cover pot.
Reduce heat to low, cook for 20 min and remove from heat. Leave cover on pot for another 20 min. ready!!
STEAMED RICE Place rice in bowl and rinse well under cold water until water is transparent. Drain.
In a saucepan bring 3 cups of water to boil. add 2 tablespoon butter, 2 cups rice and boil again. Reduce heat to low, cover and cook about 20 min.
Remove from heat and cover saucepan with a towel for 15 min. Fluff and serve.
MIDDLE EAST METHOD Rinse rice under twater and drain. Put 3 cups of water + one third oil (of cup) and bring to boil. Add 3 cups rice, boil for 2 min and cook on low heat for 20 min. Remove from heat, leave for 10 min. ready !! |
