RICE

There are different methods to prepare rice, but the 1st step in each
method is to rinse the starch well before using it. Preferable to put
in a bowl with hot water and a bit of lemon juice for half an hour
and rinse .


BASIC METHOD
put rice in hot water bowl with salt and 1 lemon juice for half an hour.
rinse well until water is clear and transparent and leave for an hour.

Fry 3 tablespoon oil + 30g' margarine. Add 2 cups rice , salt & paper
and stir 2 min.  Add 1.5 cups water and cover pot.

Reduce heat to low, cook for 20 min and remove from heat.
Leave cover on pot for another 20 min.  ready!!


STEAMED RICE
Place rice in bowl and rinse well under cold water until water is
transparent. Drain.

In a saucepan bring 3 cups of water to boil. add 2 tablespoon
butter, 2 cups rice and boil again.  Reduce heat to low, cover
and cook about 20 min.

Remove from heat and cover saucepan with a towel for
15 min. Fluff and serve.


MIDDLE EAST METHOD

Rinse rice under twater and drain.
Put 3 cups of water + one third oil (of cup) and bring to
boil. Add 3 cups rice, boil for 2 min and cook on low
heat for 20 min.  Remove from heat, leave for 10 min.
ready !!

CHICKEN STEW WITH RED RICE

1/3 CUP OIL
1.5 Kg. chicken - cut to pcs
2 chopped onions
3 chopped tomatoes
salt & paper
1 teaspoon paprika
2 tablespoon tomatoes puree
2 cups water
1.5 cups long rice


METHOD
Heat oil in a large saucepan and fry chiken .
Add onions until gold + tomatoes and fry for 5 min.
Add chicken + salt, paper and paprika.

Mix tomatoes puree with water and pour into the
pan. Bring to boil and cook on a low heat for an
hour or until chicken is tender and take out the
chicken.

Add rice to pan and bring to boil. Cook on a low
heat for 20 min.

Add chicken and remove from heat.Leave to
stand for 15 min.   ready !!!

Stuffed Tomatoes
3/4 cup of long rice
1 minced tomato
4 tablespoon olive oil
3 tablespoon parsley
3 tablespoon mint leaves
1 big onion - cut to small pcs and fried
salt & paper

Take out the tomato's inside with a spoon. Cook
rice "half way" and mix with the minced tomato.
Add parsley and onion + salt & paper.

Fill the tomatoes and put in a baking pan.

Sauce

100 g' tomato puree
1/2 cup olive oil
2 pcs of peeled garlic
salt & paper
1 tablespoon sugar

Mix all above ingredients and bring to boil
on low heat.

Heat oven to 180/360 degrees and bake for
1.5 hour.

SERVE HOT WITH FRESH BREAD.
