| While living in North Carolina I worked at On the Border mexican restaurant. After all of us would get off work we would go to a little bar/pool hall called "Harrison's". One night I was there with a friend and she ordered this Blackened Chicken Pasta Salad. I was curious so she made me a forkfull. I still remember her carefully including one of each ingredient. I took a bite and was sold! I traded in my regular cheeseburger for the healthier pasta salad. | |||||||||||||
| Harrison's Blackened Chicken Pasta Salad If you are looking for something quick and easy to prepare this might be the ticket. What you will need: 2 boneless chicken breasts blackened seasoning Rotini noodles (white, green & orange pasta) 1 can of black olives 1 tomato Honey Mustard dressing Take two boneless chicken breasts and cover them with "Blackened seasoning". Make sure they are covered on both sides. After they are covered place them on the grill. (note: getting the grill ready is probably the hardest part of this very easy meal.) While the chicken is grilling, go ahead and get the pasta going on the stove. If you don't know how to cook pasta I don't know what to tell ya! Call your mother or an ex. While your pasta is cooking start chopping up the tomato and the black olives. I like my olives to be whole, but if you want you can cut them in two. Its your choice. The pasta should be done before the chicken. Pull it off the stove and put it in a strainger. Place the strainer under cold water until the pasta is cool to the touch. The original recipe calls for the pasta to be cold with the chicken being the only hot part of the meal. You can keep the pasta hot if you wish, it is your choice. A little note about honey mustard. I usually buy my honey mustard from a local restaurant. You will find most restaurants will sell you some, or give you some if you have connections. :) My roommate works at Longhorn Steakhouse here in Kansas City and I have found their honey mustard to be right on with Harrison's. Place a nice helping of pasta into a bowl, on top of that add the tomatos and the black olives. Once the chicken is done cut the breasts into thin strips and place those on top of the pasta, tomatos and olives. Pour a thick helping of honey mustard on top and whallah! You're done! The combination of all these ingredients together makes for a delicious meal. Hope you enjoy! |
