Grandma Mongo-Epstein�s Yak Soup Obtain one large yak thru barter or trade. Cram into a large pot with cover which covers yak completely If necessary, hack the yak - so that it fits. Take whole yak or equivalent parts and put into large stewing pot, preferably one with a basket. Cover completely with water. Dr. Mongo also puts in boneless yak breasts (two or three) at this time. -200 slices of onion, chopped fine -small clove of garlic�..if desired ( helps to hide the strong yak taste). Garlic powder might be substituted here. Seasonings: -200 teaspoons - poultry seasoning. -100 table spoon - salad seasonings or garden seasonings -200 teaspoons - sage -100 teaspoon - thyme On medium heat, after water starts to boil, bring to simmer. After about one hour, more or less, test that meat falls from bones. Pull yak from water and de-bone. Remove all hide and save hide for yurt coverings, clothing, and leather helmets. Yak jackets are so very in vogue this year. Grandma Mongo thinks yak skirts will come back Throw vegetables into broth. The veggies are: -potatoes (Dr. Mongo likes using 200 to 400 Yukon Gold potatoes for buttery flavor) or 100 large baking potatoes or 200 medium potatoes - dice potatoes to small cubes -500 to 800 carrots - chopped small -500 to 800 sticks of celery, chopped small. Again, simmer until carrots are tender. Unless the cook doesn�t like �tender.� When cook is satisfied, serve. Also, put in proper storage containers, soup can be buried in ice outside for future use when winters make food lean and scarce.. This recipe will produce a slightly thick, low-salt broth. For thicker broth, use more potatoes. For thinner broth, use less potatoes. Warn diners to add salt if desired. Serve with appropriate amount of either a rice or noodle, to be served in same wooden bowl, depending on taste. Salt and/or pepper may also be added upon serving. Serve with a hard tack or other thick bread. Or crackers if you are out of hard tack � Dr. Mongo prefers Wheat Thins. If no yaks are available, substitute �chicken.� If using chicken, divide all quantities by 100�..except for the garlic clove. |
