My Arroz Mariquina Recipe

    Ingredients
  • oilive oil
  • crushed garlic
  • salt to taste
  • grated carrot
  • grated radish
  • broccoli
  • chopped leafy green vegetables
  • celery
  • rice
  • tuna fish roe (or dried shrimp) or other protein source

    Squeeze juice out of carrot (and drink it). Squeeze juice out of radish too. It is too bitter for some to drink but is good for you. Preheat the oil in the wok. Add the garlic. Then add the crushed fish roe and the salt to the garlic after 30 seconds.

    Stir-fry until roe is almost done. Then add all the vegetables . Stir for 30 to 45 seconds.

    Place rice on top of the vegetables . Do not mix yet. Cover wok for 30 seconds, so rice will heat up. It will stick if you stir immediately. Liberally sprinkle curry powder on the rice. Increase the heat. Stir well. Scrape the bottom of the wok well. The bits of caramelized vegetables improve the flavor quite a bit. It should be done in a minute or so. When the thickest vegetable -the broccoli is just about done remove heat.
