Ten varieties of SCD Muffins

Starting noon, going clockwise:
  • Pear/zucchini (lime), topped with almond slivers
  • Pear/zucchini (lime)
  • Carrot (ginger), topped with shredded coconut
  • Carrot (ginger)
  • Pineapple/coconut, topped with chopped cashews
  • Pineapple/coconut
  • Apple (cinnamon)
  • Apple (cinnamon) with currants

Center:
  • Banana walnut
  • Banana walnut, topped with chopped walnuts


SCD MUFFINS


(This recipe makes apple, blueberry and banana muffins,
but you can use any fruit or vegetable in the recipe.)

Batter:
  • 2 1/2 cups almond flour
  • 2 large eggs
  • 1/4 cup honey
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp vinegar
Fruits (or veggies):
  • 1/3 cup chopped apples & cinnamon to taste (about 1/4 tsp)
  • 1/3 cup blueberries
  • 1/3 cup mashed bananas & 2 TBL chopped walnuts

  • Combine batter ingredients.
  • Divide batter into 3 equal parts.
  • Add apples and cinnamon to one part.
  • Add bluberries to one part.
  • Add bananas and walnuts to one part.
  • Bake 28 minutes at 350.
  • Fill tins only 2/3 full.
  • Makes 18 muffins.
