| 1 oz (30g) butter 2 lb (900g) tomatoes, skinned, seeded and finely chopped 1/4- 1/2 teaspoon sugar salt and pepper |

| 1. Melt the butter in a heavy-based saucepan over low heat. Add the tomatoes and stir to mix with the butter. Cover and cook for 5 minutes. 2. uncover and stir in the sugar. partly cover the pan and simmer gently, stirring occasionally, for 30 minutes or until the tomatoes have softened and the sauce is thick. 3. Season the sauce to taste with salt and pepper. Use inmediately, or cool and then refrigerate or freeze. |
