| Stir- fried vegetables |
| Serves 4 2 1/2 tablespoons groundnut oil 1 1/2 tablespoons sesame seeds 2 carrots, cut into matchsticks 4 oz (115g) french beans, blanched for 2 minutes and refreshed 6 fresh shiitake mushrooms, stalks removed and caps thinly sliced 2 thin yellow or green courgettes, cut into matchsticks 1 tablespoon soy sauce few drops of sesame oil 1. heat 1/2 tablespoon of the oil in a hot wok or fryin pan. Add the sesame seeds and cook, stirring and shaking the wok, for 1 minutes or until the seeds are golden. Turn the seeds on to paper towels to drain. 2. heat the remaining oil. Add the carrots and stir-fry for 1 minute. Add the courgettes and stir-fry for 2-3 minutes or until all the vegetables are just tender. Add the soy sauce and sesame oil with the sesame seeds. Toss well and serve. |
