| Spicy fried chicken |
| Serves 4 4 fl oz (125ml) buttermilk 3 lb (1.35kg) chicken peces vegetable oil, for frying 2 oz 955g) plain flour 1 tbsp paparika 1/4 tsp pepper 1 tbsp water 1. pour the buttermilk into a large bowl adn add the chicken pieces. Stir to coat, then set aside for 5 minutes. 2. heat 1/4 in (5mm) of oil in a large frying pan over medium-high heat. Do not let the oil overheat. 3. In a bowl or plastic bag, combine the flour, paprika and pepper. One by one, lift the chicken pieces out of the buttermilk and dip into the flour to coat all over, shaking off any excess. 4. Add the chicken pieces to the hot oil and fry until lightly browned, about 10 minutes, turning over halfway through cooking time. 5. Reduce the heat to low and add the water to the frying pan. cover and cook 30 minutes, turning the pieces over at 10-minute intervals. Uncover the pan and continue cooking until the chicken is very tender and the coating is crisp, about 15 minutes, turning every 5 minutes. Serve hot. |
