Spacy tomato barbecue sauce
Serves 6
2 tablespoons vegetable oil
1 onion, finely chopped
1 garlic clove, finely chopped
1 1/2 pint (300ml) passata
8 oz (225g) tomatoes, skinned, seeded and chopped
4 fl oz (120ml) cider vinegar
1 tablespoon worcestershire sauce
2 1/2oz (70g) soft light brown sugar
2 teaspoons chilli powder, or to taste
1 bye leaf
few drops of mesquite liquid smoke flavouring
salt and pepper




1.  heat the oil in a saucepan, add the onion and cook until soft, stirring occasionally.  Stir in the garlic and cook for 30 seconds.  Add the passata, tomatoes, vinegar, worcestershire
sauce, brown sugar, chilli powder, bay leaf and liquid smoke, if using.  Season with salt and pepper to taste.

2.  Bring to the boil, reduce the heat and simmer for 15 minutes, stirring from time to time.  Taste and adjust the seasoning, if needed.

3.  use as a basting sauce for grilled or barbecued and steak.  Serve additional sauce to accompany the food.
