Meat loaf with mushrrom stuffing
Serves 6
8 oz (225g) mushrooms, coarsely chopped
1 small onion, finely chopped
1 oz (30g) butter
4 1/2 oz (130g) fresh breadcrumbs
3 tablespoons chopped fresh parsley
1 teaspoon dried thyme
2 teaspoons bottled brown sauce
salt and pepper
1 1/2 lb (700g) lean minced beef
8 oz (225g) lean minced pork
5 tablespoons tomato ketchup
2 eggs, beaten
1.  Preheat a 375 F/ 190C / Gas 5 oven. 

2.  Cook the mushrooms and onion in the butter over moderate heat until soft.  Turn the mixture into a bowl.

3.  Add the breadcrumbs, parsley, thyme, brown sauce, salt and pepper.  mix well.

4.  In another bowl, mix the beef with the pork, tomato ketchup and eggs.

5.  pack half of the meat mixture into a large loaf tin, pressing it into an even layer.  Pack the mushroom mixture on top, then cover with the rest of the meat.  Bake for 1 1/4 hours.

6  Remove from the oven and leave to stand for 15 minutes.  Pour off the juices, then turn out the meat loaf on to a serving plate.  Serve hot.
