| Green Salad with oranges and avocado |
| Serves 4 1 round lettuce 1 small bunch of watercress a few leaves of frisee 1 small bunch of rocket 1 red onion, thinly sliced into rings 2 seedless oranges, peeled and segmented 1 ripe avocado, peeled, stoned and cubed 2 oz 955g) walnut pieces, toasted for the dressing 6 tablespoons olive oil 1 tablespoon walnut oil 3 talbespoon lemon juice 2 tablespoon orange juice 1 teaspoon grated orange zest 1 teaspoon dijon mustard pinch of caster sugar salt and pepper 1. Combine all the dressing ingredients in a bowl or screwtop jar. Whisk or shake well together. 2. Put the rinsed and crisped salad greens in a bowl and add the onion, orange segments and avocado. 3. Add the dressing and toss the salad combine well. 4. Scatter the walnuts on top and serve immediately. |
