Bulgar wheat salad with herbs
Serves 6
4 oz (115g) bulgar wheat, soaked and well drained
8 oz (225g) tomatoes, seeded and diced
1 samll red onion, chopped
3 spring onions, chopped
2 oz (55g) parsley, finely chopped
4 tablespoons chopped fresh mint
4 fl oz (120ml) olive or vegetable oil
5 tablespoons lemon juice
salt and pepper
black olives and mint leaves, to garnish




1.  Combine all the ingredients in a large bowl. 

2.  Stir to mix the ingredients thoroughly.  Taste and adjust the seasoning if necesary.

3.  Serve the salad at room temperature, garnished with black olives and mint leaves, if liked.
