| Fried eggs and sausage on tortillas |
| Serves 4 8 oz (225g) minced pork 1/2 small inion, finely chopped 1 teaspoon chilli powder (or to taste) 1/2 teaspoon ground cumin 1/2 teaspoon dried oregano 1 tablespoon vinegar 1 garlic clove, finely chopped salt and pepper oil, for frying 4 large fres or canned con tortillas 4 eggs 2 oz (55g) butter or bacon fat mexican hot sauce or salsa, to serve 1. Put the pork in a bowl and add the onion, spices, oregano, vinegar, garlic, salt and pepper. Mix well, cover and refrigerate overnigh. 2. Cook the pork mixture in a large frying pan until it is browned and crumbly, stirring occasionally. 3. Meanwhile, heat 1 in (2.5cm) oil in a wide pan to 365 F (180 C). Fry the tortillas until they are crisp and golden brown, keeping them falt. Drain on paper towels and put on a baking sheet. Deep warm in the oven. 4. Fry the eggs in the butter or bacon fat (or use oil for frying if you prefer). 5. Put a tortilla on each plate. using a slotted spoon, divide the pork mixture among the tortillas. top each Serving with a fried egg. Serve with hot sauce or salsa. |
