Thanksgiving
This is America's holiday... folks!
We all are celebrating our past good fortune of having landed at Plymouth Rock.
Then the Pilgrims met up with some friendly Indians and had a feast together.
No other country celebrates Thanksgiving Day in quite the same way as we do.
So, remember to say... Thank you for all your good fortune!
We celebrate Thanksgiving Day in the Fall ...
The leaves have all changed colors and have gentle fallen to the ground.
Hope your life is filled with everything... that your heart desires!
The harvest is now in... here's some great recipes to try.
Pumpkin Bread
1 cup Brown Sugar, firmly packed
� cup White Sugar
1 cup Pumpkin, cooked or canned
� cup Salad Oil
2 Eggs, unbeaten
2 cups Flour, sifted
� cup Water
1 tsp. Soda
� tsp. Salt
� tsp. nutmeg
� tsp. cinnamon
� tsp ginger
1 cup Raisins (Opt.)
� cup Chopped Nuts
Combine sugars, pumpkin, oil and eggs. Beat until well blended.
Sift together flour, soda, salt and spices. Add and mix well.
Stir in raisins, nuts and water.
Spoon into well greased and slightly floured 9x5x3" loaf pan.
Bake at 350� for 65-75 minutes or until done when tested.
Turn out on rack to cool... Enjoy!

Old-Fashioned Apple Pie
Serves 10 to 12
2 tablespoons all-purpose flour, plus more for dusting
12 Granny Smith apples, peeled, cored, and sliced
3/4 cup sugar, plus additional for pie top
Zest and juice of 1 lemon
1� teaspoons cinnamon
� teaspoon nutmeg
Pinch ground cloves
2 tablespoons unsalted butter
1 large egg, beaten
Heat oven to 375�.
On a lightly floured surface, roll out pastry shell into two 1/8-inch-thick circles.
To a diameter slightly larger than that of an 11-inch plate.
Press one pastry circle into the pie plate.
Place the other circle on waxed paper, and cover with plastic wrap.
Chill all pastry until firm, about 30 minutes.
In a large bowl, combine apples, sugar, lemon zest and juice, spices, and flour.
Toss well.
Spoon apples into pie pan. Dot with butter.
Cover with remaining pastry circle.
Cut several steam vents across top. Seal by crimping edges as desired.
Brush with beaten egg, and sprinkle with additional sugar.
Bake until crust is brown and juices are bubbling, about 1 hour.
Let cool on wire rack before serving.
Pie Crust
2� cups all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1 cup (2 sticks) unsalted butter, chilled and cut into small pieces
� to � cup ice water
In a food processor, combine flour, salt, and sugar. Add butter.
Process until the mixture resembles coarse meal, 8 to 10 seconds.
With machine running, add ice water.
In a slow, steady stream through feed tube.
Pulse until dough holds together without being wet or sticky.
Be careful not to process more than 30 seconds.
To test, squeeze a small amount together:
If it is crumbly, add more ice water, 1 tablespoon at a time.
Divide dough into two equal balls.
Flatten each ball into a round disk, and wrap in plastic.
Transfer to the refrigerator, and chill at least 1 hour.
Dough may be frozen and stored for up to 1 month.

Memories...
T'was the night of Thanksgiving, could still smell the turkey and just couldn't sleep.
Tried counting backwards, tried counting sheep but the leftovers beckoned me and just wouldn't keep.
The dark meat and white... cranberries... tried to fight the temptation with all of my might.
Tossing and turning with anticipation, the fixation of a snack became a fight.
Racing to the kitchen, flung open the door and gazed at all the goodies of galore.
Gobbled up some turkey, buttered potatoes with gravy, yams, some stuffing and still wanted more.
A slice of pumpkin pie with a dollop of whip cream.
Once again stuffed and now so ready to lay down for my nightly dream.

We could probably use a little exercise after all the food we ate yesterday!
