joe brought a plate of these cookies for us at the office one day, and they were so delicious! barb says it's an ordinary recipe, but believe me, they're anything but ordinary
INGREDIENTS

real butter |

2/3 cup |

vanilla |

baking soda |

flour |
1 1/2 cups |

oatmeal |
1 1/2 cups |

chocolate chips |
2 cups |

pecans or coconut |
1/3 cup |
METHOD
whip butter and sugars until very light and fluffy
add vanilla
add eggs one at a time and blend well
stir in dry ingredients, then oatmeal and other ingredients by hand
drop by spoonful onto cookie sheet sprayed with Pam
bake in 350 degree oven for 10-15 minutes depending on the size
NOTES
we vary this by using raisins and dates, cinnamon, cloves, orange peel, etc. skor bits and so on.
i use mexican white vanilla
i think this might be a very ordinary recipe, it is just that we use butter to bake and the convection oven does a good job of cookies !!!!
we often make up the dough and keep it in the fridge for a week, so we can bake up fresh cookies.
