brenda's banana bread
from my sister Brenda Matsuda
I CAN'T make banana bread for some
reason. I'm genetically unable to do it. However, this is
the only banana bread recipe that has ever turned out for me. And
when Brenda makes it, it's to die for.
INGREDIENTS
| Butter or margarine | 1 cup | ||
| Sugar | 1 cup | ||
| Eggs | 2 | ||
| Banana (mashed) | 1 cup (3 med bananas) | ||
| Flour | 2 cups | ||
| Baking soda | 1 tsp | ||
| Baking powder | 1/2 tsp | ||
| Salt | 1/2 tsp | ||
METHOD
Cream butter and sugar together until fluffy.
Add eggs and beat until smooth.
Mash the bananas and add them to the butter, sugar and egg mixture.
Combine the dry ingredients together and slowly add them to the wet ingredients.
Pour into a lightly greased and floured loaf pan.
Bake at 350 degrees for approximately 45 minutes.
NOTES
Brenda says she always sets her oven at 300 or 325 degrees.
Check after 30 minutes to see how it's doing and adjust the temperature if need be.
