baking powder biscuits

INGREDIENTS
| flour | 2 cups | ||
| baking powder | 2 tsp | ||
| salt | 1 tsp | ||
| cold shortening | 1/4 cup | ||
| cold milk | 2/3 cup |
METHOD
Sift the flour, baking powder and salt together
Cut in the shortening with 2 knives or a pastry blender.
Add the milk and mix quickly.
Knead for a few seconds on a lightly floured board.
Pat out to 1/2" thickness and cut with a biscuit cutter.
For soft sides, place close together on a greased baking sheet. For crusty sides, place apart.
Bake at once at 450 degrees for 12 minutes
NOTES
I used butter instead of shortening and they were so delicious. I've never made really good biscuits before - they were always to dry and heavy, but these were great!
