This barbecue chicken is simple to make and a treat for the senses. It has become a proven favorite in my family.
 

 

Ingredients

  • 1 bottle barbecue sauce (I prefer Sweet Baby Ray's or Bull's Eye.)
  • 1 tsp. dry mustard
  • 1 yellow onion, cut into rings
  • 4-6 boneless, skinless chicken breast halves (trim non-meat stuff off.)

Instructions

  • Preheat oven to 350º.
  • Line a 13" x 9" baking dish or cake pan with heavy-duty foil.
  • Pour about 2/3 of the barbecue sauce on the bottom.
  • With a spoon, blend in dry mustard.
  • Arrange onion rings over this, overlapping if necessary.
  • Lay chicken on top of onions. Bake for 45-50 minutes.

Suggestions

  • I serve this chicken with Texas toast, buttered egg noodles, and green beans.
  • Add honey if you like a little sweetness.
  • Use spicy brown mustard instead of dry mustard for more "zip."
  • To save time, omit the onion and use onion powder instead.
