This apple pie recipe is one of my favorites and it's really easy since it doesn't have a top crust. Hope you enjoy!

PERFECT APPLE PIE
5 to 7 tart apples
3/4 cup sugar
2 tbsp tapioca or flour
1/2 to 1 tsp ground cinnamon
Dash of nutmeg
Dash of salt

Combine sugar, tapioca or flour, cinnamon,
nutmeg and salt. Mix with peeled apples. Set aside. Make your crust.

STRUESSEL TOPPING
1/3 cup sugar
3/4 cup flour
1 stick oleo

Mix sugar & flour. Cut in butter until
crumbly. Sprinkle over apples.

Bake at 400 degrees for 40 to 50 minutes.


NEVER FAIL PIE CRUST
3 c flour
1 1/4 c shortening
1 tsp salt
1 egg, well beaten
5 tbsp water
1 tbsp vinegar

Cut shortening in flour and salt. Combine egg, water and vinegar. Pour liquid into flour mixture. Blend until flour is moistened. This can be rolled between wax paper and dusted with flour. Can be re-rolled. Can be kept for 2 weeks in refrigerator.

note: I chill the dough for about an hour then I roll out the crust between wax paper and it works like a charm!
