stuffed tomatoes |
stuffed with orzo and tuna, there are a really great light, summer lunch. yum. |
ingredients:
four large, ripe tomatoes
medium cucumber
large can albacore tuna
1 cup dry orzo pasta
3/8 cup mayo
1/4 cup milk
1/2 T dry parsley
1/2 t onion powder
1/4 t salt
1 medium clove garlic, crushed
couple dashes of black pepper
instructions:
-cook the orzo according to directions on the back of package. rinse well with cold water.
-while orzo is cooking, cut tops off tomatoes and discard. scoop out the insides of the tomatoes, leaving enough wall to sustain filling. cut the insides of the tomatoes into small bite-size pieces.
-peel and chop cucumbers into slices and then quarters.
-mix orzo, cucumbers, tomato peices, and tuna (making sure that tuna is crumbled into small pieces).
-in separate bowl, mix mayo, milk, parsley, onion powder, salt, pepper and garlic.
-add the sauce to the orzo mixture and mix well.
-scoop mixture into tomatoes and serve on a plate with a generous portion of the orzo mixture on the side.
