macaroni and cheese with green chiles |
my version is really so far removed from the original that it is my own. i like it better. |
ingredients:
1 pound macaroni
1 jar ragu cheese sauce
1 can whole green chiles, diced coarsely except for three
1 meduim onion
2 T butter
4 cups shredded cheddar cheese (generous)
instructions:
-preheat oven to 350 degrees.
-cook macaroni according to directions on package.
-put drained macaroni in a casserole dish.
-in sauce pan, heat cheese sauce and add 2 cups of cheese and the diced green chiles. you may want to reduce the amount of green chiles, depending on your intended audience. stir until cheese is melted
-in frying pan, saute the onion in the butter until transparent.
-add cheese sauce and onion to macaroni (in the cassarole dish) and stir until evenly mixed.
-top casserole first with remaining 2 cups of cheese and then with the whole green chiles
-bake for 30 minutes. you may put it under the broiler to crisp cheese.
