baked asparagus and bread pudding

this is easy and takes little time in the kitchen. if you can find some nice asparagus, it's a great dish.

ingredients:
18 stalks fresh asparagus
6 slices white bread, de-crusted
6 slices swiss cheese (medium- to thick-sliced)
4 eggs
2 cups milk
� cup diced onion
1 t salt
1/8 t pepper
� t nutmeg
� cup shredded cheddar cheese

instructions:
-preheat oven to 325 degrees.
-cook the asparagus. i throw mine in the steamer for about 15 minutes.
-while asparagus is steaming, beat eggs in medium-sized bowl.
-add milk, onion, salt, pepper and nutmeg to eggs and mix.
-arrange bread slices in the bottom of a 8�x12� pan/casserole. put one slice of swiss cheese on each slice of bread.
-pour egg mixture over the bread and cheese.
-bake for 25 minutes. remove from oven.
-arrange asparagus in neat lines on top of the casserole. sprinkle cheddar evenly over asparagus.
-bake again for 15 minutes, or until top begins to turn golden.
-serve warm.

serves 6 for breakfast, 4 for dinner
