French Onion Soup (freedom onion soup ha ha ha... ;-) (for ~2-4 servings) Ingrediants: 1-2 TBsp. Margarine, Butter, Olive Oil, whatever... 1-3 White Onions, (depending on size) (POTENT onions... _NOT_ Vidalia, etc...) As much fresh garlic as you like ;-) 2&1/2 -5C of bouillion/stock (vegetable, beef, mushroom, homemade stock. whatever, "thin liquid") (a dry white wine makes this extra special... less than half a glass though... save the rest for the cook...) Spices: 1-3 Tsp. pepper (preferably white), garlic powder (_if not used fresh_), pinch of cumin, bay leave, ???, etc... use your imagination... to taste... Bread stuff of some kind (Slice of bread, croutons, whatever....) Cheese, white, (mozarella, provalone, fuck even feta...) I prefer Provalone !!! Directions: Ingredients are listed in order.... Sautee Onion and Garlic with Oil till Onion begins to turn translucent. Add Spices to taste. Add liquid (stock/bouillon) of choice. (should be thin, think soup, NOT stew) Simmer 5-10 mins. Ladle soup into "oven-safe" bowls, sparing 1" Place one slice of bread (or 1 layer croutons, etc....) on top of soup Place Cheese on top of Bread (sliced, shredded, what ever... be generous....) Place Bowls of goodness in Broiler, not long, till bubbly and brown.... Chow Down... (Shit Will Be Hot, Dont blame Me Dumbass...) This is really a much simpilar recipe than it sounds, proportions are the only thing to figgure out... basically sautee a chopped onion boil in H2O pour in bowl(s) put bread and cheese on top broil appropriately love all, bless all, esp, E.K. who inspired me to write this..
