BBQ Capital of Texas Championship Cookoff (IBCA)
Lockhart, Texas
The Meximorro BBQ team assisted the Smokin' Pits team (San Antonio) for this event. Both teams cooked up chicken and brisket, and Smokin Pits did the honor of cooking their award winning ribs. In the end, we used Smokin Pits chicken and Meximorro's brisket for turn in. Both teams made good bbq, so it was a tough decision to make.
It was a couple of hot summer days, but we managed to find ourselves cooking some great barbecue in the heat. There were over 80 teams. Although our ribs and brisket tasted award winning, there we're no top finishes for us this time around. We had fun with friends and family arriving to enjoy the food and beer. It was a great experience, and I believe the two teams will combine again for future events and grab the elusive "GRAND CHAMPION" title.
Two of the most important members are missing from the pictures, and that's the wives, Carol and Lena. Lena was so busy slicing up the meat, that we forgot to take pictures of it.
Here's our "cute" banner.
Head cook, Aaron, going over strategies with me.
Aaron explaining to Roman that the neighboring team is putting in 4 large logs at a time in the firebox.
Aaron and Roman are tending the fireboxes to their smokers while I watch over my bullet smokers. We were limited on space, so I couldn't bring the bumble bee to the competition, but the bullet smokers still put out some good cue.
Team Smokin' Pits, with me as an honorary member. Either the shade is strong, or we got darker from all that sun!
