| Brer Rabbit's Carrots |
| This recipe was taken from the children's cookbook, Walt Disney's Mickey Mouse Cookbook. What you need: 4 large carrots 1/2 teaspoon salt 2 tablespoons butter or margarine 3 tablespoons brown sugar What you do with it: 1. Scrape the carrots with the vegetable parer. Cut them into penny slices 2. Place the carrots in a saucepan and cover with cold water. Add the salt. 3. Cover the saucepan and heat over medium-high heat until the water starts to boil. Turn the heat down to low, remoe the cover and cook 15 minutes longer. 4. When the carrots are tender, pour the contents of the suacepan into a colander in the sink. (Ask for help with this-- don't do it yourself.) Shake the colander to drain off all the water. 5. Put the carrots back in the saucepan. Gently stir in the butter and brown sugar. Cook over low heat for 2 minutes, stirring a few times. The carrots should be shiny and glazed. Serves 4. |
