Peanut Cake .. Aunt Daisy

This and Macaroon cake were Clarrie's favourites!


Beat

• small cup sugar
• 2 eggs

Add

• 500 gr minced (very finely) peanuts
• 1 teaspoon baking powder

Pack into a greased sponge roll tin.

Bake 3/4 hour and leave in tin until cold

Turn out and ice bottom of cake with butter icing with a little lemon juice in it.
