Macaroon Cake
One of Clarrie's favourites
- 175 grams flour
- 1 tsp baking powder
- 125 grams butter
- 125 grams sugar
- 3 egg yolks
- 1/2 cup milk
- 1/8 tsp salt
- 1 tsp pure anilla essence
Cream butter and sugar; add egg yolks and vanilla essence, beat well
Then add sifted dry ingredients alternately with milk.
Spread in a greased shallow tin and cover with the following macaroon mixture.......
- 3 egg whites
- 125 grams sugar
- 1+1/2 cups coconut.
Beat egg whites until quite stiff, fold in sugar and coconut.
Bake about 30 mins at 180C (350F)
