Carrot Cake




Combine flour, baking soda, spices into a bowl.
Add sugar, grated carrot, fruit and walnuts.. Mix
Blend eggs and oil together well and add to dry ingredients
Mix well. Bake in lined and greased tin (20cm) at 180C for 40-45mins

Cool then ice with..Cream cheese icing.
Beat butter and cream cheese until creamy, mix in icing sugar and lemon rind.
