*Vanilla beans are long and thin. To get the essence of the bean, it must be split lengthwise, then scraped to remove the resinous, pasty insides. Lay the bean on a flat surface with its seam as the center and split to one end. Place the point back at the center and split it to the other end. Use the blade of the knife to scrape the pasty seeds out. When placing into the pot you can include the skin of the bean as well. Make sure to stain into cups.
**Raw Sugar is usually Coarse, You can roll it a few times with a rolling pin to make it finer.
This Fancy Dessert is simple to make. Creme Brulee' is French for "Burnt Creme"
4 Egg Yolks
1/3 Cup Sugar
2 Cups Heavy Whipping Creme
1/4 Cup Raw Sugar
3 Rasberrries Per Cup or one split Strawberry (garnish)
1 Sprig of Mint per Cup.
1 Vanilla Bean (optional)
1. Beat egg Yolks well, Prepare Vanilla Bean* (see note below).
2. Put Creme, Sugar and Vanilla seeds and bean into Pot and Bring to a slow Boil over Medium Heat.
3. After boiling Cream, Sugar, and Vanilla for 1 Miniute, Pour 1/3 of Mixture into Eggs.
4. Wisk Egg and Creme Mixture together and return to pot.
5. Wisk mixture in pot over medium low heat for 2 miniutes.
5. Strain Mixture into Individual serving Cups. Refrigerate for 4 hours.
5. Sprinkle Raw Sugar (fine grain**) over top of each cup so that there is a thin coat on top of each cup.
6. Place in Broiler Maximim heat and keep turning so as not to burn the top. Do this until the top is golden brown. his should only take a minuite or two. A hand held Propane torch works even better.
7. Refrigerate for another 4 Hours, Garnish with Rasberries or Strawberries, and Sprig of mint. Serve Chilled.
