| It is better that the herbs from our gardens or the wild woods and fields be taken in this way-drunk fresh in alltheir srength-than wasted and weakened in flavoring for victuals, thus to comfort only the vain palate. these brews are true powers, whereas the same herbs cooked in food are poor wraiths of themselves. Honour them as they deserve and they shall not fail. The fair leaves or other necessary parts should be gathered as young and fair as possible, and a handful placed in a plain brown teapot of good size. Fill the pot then with fresh boiling water, and allow this tea to steep for twelve minutes. Pour it out then straightaway into a cup; sweeten it with a teaspoonful of honey, and drink the infusion while it is hot. An Elixir of Honey To strengthen the constitution and dispell afflictions of the mind and body, this honey elixir has no equal. It is pure and wholesome, and may be taken by children, grown men and women, and ancients alike, with good results. Concoct it thus: Boil in eight ounces of water the fresh leaves of sage, thyme, and mint, a large spoonful of each, until of liquid there be left but an ounce or two. Pour off this brew, and when it is cool add to it a teaspoonful of good brown cider vinegar, and also three ounces of honey. Stir this well until the honey is blended and the whole shines clear. then it may be sipped, from a wine glass, all or in part. If any is not used, it may be kept in a tightly corked vessel for later draughts. |
