WATERMELON PICKLES

2 LBS. WATERMELON RIND
LIMEWATER (made from 1 quart of water and 1 Tablespoon of lime juice)
4 CUPS VINEGAR
1 CUP WATER
5 CUPS SUGAR
1 TABLESPOON ALLSPICE
1 TABLESPOON WHOLE CLOVES
6 SMALL PICES OF STICK CINNAMON

PARE AND REMOVE ALL GREEN AND PINK FROM THE WATERMELON RINDS.  CUT IN DESIRED SIZES AND SOAK IN LIMEWATER FOR 2 1/2 HOURS.  DRAIN AND PLACE IN ENOUGH FRESH WATER (FILTERED WATER WORKS BEST NOWADAYS) TO COVER ALL WELL.  COOK 1 1/2 HOURS OR UNTIL TENDER.  LET STAND OVERNIGHT IN THE WATER, COVERED LOOSELY. 

MAKE SYRUP OF VINEGAR, SUGAR AND SPICES.  LET SYRUP COME TO THE BOILING POINT AND ADD THE DRAINED RIND PIECES.  BOIL GENTLY 2 HOURS OR UNTIL THE SYRUP IS THICK.  PACK INTO JARS.
