Pearl Milk Tea
Absolutely one of my favorite drinks...the best place to get the real deal is at Fantasia in Cupertino, CA, but if you're like me and don't have access to Fantasia, try making it yourself.  After much experimentation and many failed trials, I think I finally mastered the recipe.  I'm not sure how they make the tea, but I'll give you my suggestion below.  If you got any other ideas, let me know.  Enjoy!

Boba:
As many dry boba (from the bags) as you think you need

1. Boil a pot of water (use a pot coated with non-stick material if possible...it's easier to clean up if you accidentally mess up =b).  While you wait for the water to boil, discard any broken boba, which may ruin your entire batch of boba.
2.  Once water is rapidly boiling, add boba to water.  Let boba cook in boiling water for 5 minutes, gently stirring during this time.
3. After five minutes, turn the stove off.  Cover the pot of boba and let it sit for 30 minutes.
4. Bring the pot of boba back to a boil.  Let it boil for 3 minutes.  Turn off the heat and let the boba sit, covered, for another 30 minutes.
5. Bring the pot of boba back to a boil; let boil for 3 minutes.  Turn off heat and let boba sit for 1 hour.
6. Bring the pot of boba back to a boil and boil for five minutes.
7. Remove pot from heat and add enough sugar to your taste (I usually add about three spoonfuls for four servings of boba)

Tea:
1 3-in-1 instant tea package per serving

1. For every package of 3-in-1 tea package, boil 1/4 cup water.  Put instant tea into a cup.  Add boiling water to cup and mix until instant tea dissolves.  Add 3/4 cup ice water per serving.  Add boba to tea, along with those funky fat straws, and you've got your own boba.  Yummy! =b
