TEXTS: Culinary Essentials, Hospitality, From School To Work COURSE DESCRIPTION: An instructional program that prepares students in managerial, production and service skills in foods and hospitality industry. Culinary includes the study of planning and preparing foods for special occasions and catering. Food preparation includes regional and foreign foods, finger foods for receptions, cake decorating, and attractive serving of foods. These are enhanced by speakers and field trips to local catering facilities and bakeries. Guest speakers help to develop an awareness of the hospitality and tourism industry. Other topics covered include: career opportunities, job advancements, resumes, job applications, and interviews. Other areas cover characteristics of good employees, communication skills and employer expectations. COURSE FEE: $25 |
