Capt. Crunch Cookies

1 pkg. white almond bark
1C  Mini marshmallows
1C. Rice Krispies
2C. Capt. Crunch Cereal
1C. Peanuts

Melt bark according to directions.  In large bowl, combine other ingredients.  Pour melted bark over cereal mixture and stir until coated.  Spoon onto wax paper covered cookie sheets.

Preheat oven to 350
In 7x11 glass baking dish layer the following:
1 � stick melted margarine
1 � C. graham cracker crumbs (sprinkled evenly in bottom)
1 can sweetened condensed milk (Eagle Brand)
1 C. chocolate chips
1 can coconut
� C. chopped nuts
Press with flat spatula to firm up layers.
Top with cut up maraschino cherries
Bake for 20 min.
Holiday Fruit Cookies

Preheat oven to 375
1 C. margarine
2 C. brown sugar
� C. sour milk (or buttermilk)
2 eggs
3 � C. sifted flour
1 tsp. Baking soda
� tsp. Salt
1 C. cut-up candied red and green cherries
1 pkg. chopped dates
1 C. chopped nuts

Cream margarine and sugar; add eggs and mix well.  Sift flour, soda, and salt together.  Add milk and flour alternately and mix well.  Remove from mixer and stir in cherries, dates and nuts by hand.  Spoon onto cookie sheet and bake 8-10 min.  Do not over bake.

These cookies freeze well.
You can add more cherries if desired.
Oatmeal Cookies

� C. margarine
� C. shortening
1 C. white sugar
1 C. brown sugar
2 eggs
1 tsp. Vanilla
1 � C. sifted flour
1 tsp. Baking soda
1 tsp. Salt
3 C. quick cook oats
� C. chopped nuts
� C. coconut

Cream fats and sugars.  Add eggs and vanilla.  Sift flour, soda, and salt together and add gradually.  Remove from mixer.  By hand, mix in oats, nuts and coconut.  Chill dough refrigerator.  Spoon onto cookie sheet and bake 10-12 min. until lightly browned at 375.
Makes 5 doz. 3� cookies
Pineapple Cookies

Preheat oven to 350
1 C. brown sugar
1 C. white sugar
� C. shortening
� C. margarine
2 eggs
1 � C. crushed pineapple (not drained)
� C. chopped pecans
4 C. sifted flour
1 tsp. Baking soda
� tsp. Salt

Cream sugars and shortenings.  Add eggs and mix well.  Add pineapple and nuts and mix.  Sift flour, soda, and salt together.  Add gradually and mix well.  Spoon onto cookie sheet and bake for 10-12 min. or until lightly browned.  Makes 5 doz. 3� cookies

Icing
1 lb. powdered sugar
2 Tbsp. Pineapple juice
milk as needed
3 drops yellow food coloring
