| Chicken Parmigiana From: Melissa (owensmommie) Ingredients 4 to 5 boneless chicken breasts 2 large eggs (lightly beaten) 1/2 teaspoon salt 1/8 teaspoon black pepper 3/4 cup of fine dry bread crumbs (italian style works best) 1/2 cup of veg oil 1 large jar of spaghetti sauce (I prefer Prego) 1 (8 oz) package of Mozzarella cheese 1 (8 oz) package of Parmesian cheese Place chicken on a cutting board and pound lightly until the chicken is about 1/4 inches thick. Combine eggs, salt & black pepper in bowl; put bread crumbs on wax paper. Dip chicken into egg mixture, then into the crumbs. Heat oil in large skillet to very hot. Quickly brown chicken on both sides. After place chicken in shallow 13 x 9 baking pan. Pour sauce over chicken & sprinkle with 1/2 cup of Parmesian cheese. Cover pan with foil. Bake at 350 degrees for 30 minutes. Put mozzorella cheese over chicken. Then bake for 10 to 12 minutes or until cheese has melted. Let cool for 10 to 15 minutes. Serve & Enjoy! Chili-Taco Casserol From: Patty a.k.a. Angel (Ang00) Ingredients 1 (15 oz.) can of chili with or without beans 1 (10 oz.) can of enchilada sauce (1 1/4 cup) 1 (8 oz.) can of tomato sauce 1 tablespoon grated onion 2 cups of grated sharp cheddar cheese (8 oz.) 1 (10 oz.) package of taco or nacho tortilla chips 1 cup sour cream Pre heat oven to 370 degrees. Place oil in shallow 3 qt baking dish. Stir together chili, enchilada sauce, tomato sauce, onions and 1 1/2 cups of grated cheese. Add 6 cups of chips, stir to coat them well with sauce. Place into prepared dish and bake for 30 minutes. Spread top with sour cream and sprinkle with remaining cheese and chips. Bake for another 5 minutes. Let cool, serve & enjoy!
