Yellow goatsbeard
Tragopogon dubius
Yellow Goatsbeard, sometimes "Johnny-go-to-bed-at-noon" is a European import that is sometimes mistaken for a dandelion.  Its large yellow flower head turns to face the sun, opens only on sunny mornings, and closes by noon.
Its long taproots can be dug and roasted as a coffee substitute and the entire plant produces a sticky, milky sap.  The seed head looks like a giant dandelion plume (or like an old gray goat's beard) and some people spray these seed heads with hairspray and use them in dried flower arrangements.
