Mother Whitney's Meat Loaf

Ingredients

1-1-1/2 pond lean (92-97%) ground beef
slice of white or wheat bread soaked in skim milk (about 1/2 cup milk)
1 egg, beaten
2-3 scallions thinly sliced/chopped (you can use 2 or 3 tablespoons minced regular onion)
1/2 teaspoon salt
1-1/2 teaspoons Worcestershire sauce
1/8 teaspoon each of pepper, dry mustard, celery salt & garlic powder
Method
Heat oven to 350 degrees F. Mix all ingredients thoroughly. Spread evenly in a bread loaf pan. Bake 1 hour, or until done.

Black Magic Cake

Ingredients

2 cups sugar
1-3/4 cups flour
3/4 cup Hershey's Cocoa
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 eggs
1 cup buttermilk or sour milk (to make buttermilk, place one tablespoon vinegar in a 1 cup measuring cup and add milk to make 1 cup. Stir lightly and let stand five minutes)
1 cup strong black coffee OR 1 cup boiling water plus 2 teaspoons instant coffee
1/2 cup vegetable oil
1 teaspoon vanilla extract
Method
Heat oven to 350 degrees F. Grease and flour 2 9-inch round cake pans or 13-inx9-inx2-in pan. Stir together sugar, flour, cocoa, baking soda, baking powder and salt in a large bowl. Add eggs, buttermilk, coffee, oil and vanilla; beat on medium speed 2 minutes (batter will be thin). Pour batter evenly into pans.
Bake 35-40 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes; remove from pan to wire racks to cool completely. Frost as desired.
