Get a Desert rose to swap for a gold chocobo with the man in kalm upstairs next to the bar before you fight Ruby Weapon On Discs two and three.

With a Gold Chocobo you can go anywhere on the entire world map, try entering all of the caves you cannot get to without it. You can get knights of the round on an uncharted island, etc.
The Most Easiest Way To Beat The Ruby Weapon
Note: You must have defeated Ultima Weapon
Once you get onto Disc two, enter the code to get the Desert Rose item in your Gameshark CD and go to Kalm town, talk to the man upstairs of the house next to the bar.
Swap him the Desert Rose for a Gold Chocobo. Go to the chocobo farm and rent a stable then go back to kalm and talk to the chocobo to let it run free into the chocobo stable. Go to the old farmer's grandson and ask to ride it around. Head to the top right hand side of the map to find a round island on the gold chocobo and get off then walk into the cave to find Knights Of The Round Materia.
Now, ride the chocobo to Wutai and head into the cave to find Mime, Cammand Materia. Enter the town Wutai and walk into the Cat house, walk up the stairs and runtowards the chest which holds HP Absorb Materia. Go to Cosmo Canyon and buy a few of HP plus's from the Materia shop. Equip cloud to with Hp plus's to full hp (9999). Make sure that he has enough slots for at least three extra Materia's (Knights Of The Round, Mime and HP Absorb.) It's best to have a Wizard Braclet and Clouds Ultima Weapon which you get when you fight the actual Ultima Weapon Itself!
On two connected slots place Knights Of The Round in the first and Hp Absorb in the other. On the final third free slot place Mime Cammand Materia. Check that you have enough MP to use Knights Of The Round at least once.
Save your game then kill all but Cloud. Revive yourself to full health with the other two players dead. Return to the Highwind or the Gold Chocobo and ram into the Ruby Weapon outside of the gold sourcer in the sand.
Once you get into the fight, DO NOT IN ANY WAY, HEAL YOUR PLAYERS. Use Knights Of The Round on his Claws then mime on yourself when your time is up, it will use it on his claws if they are out and Ruby himself if they are not. Do not worry about health, after every time you use knights Of The Round, it will fully restore your HP. Make sure that you are fast at using Mime. Keep using Mime until he dies, Mime repeats the last attack but without wasting anything other than time! So it will cost you zero MP except for the first attack!
Good luck, I got over excited and my heart was pounding faster than ever as i was beating it. It was an amazing victory!
