Cranberry Orange Biscotti

Ingredients
1 pkg. Cranberry Orange Mix
2 eggs
1/2 cup (1 stick) unsalted butter, softened
1/2 cup white chocolate chips
1/2-3/4 cup flour

    
Method
Mix Cranberry Orange Mix with softened butter. Add eggs, blend well and fold in chocolate chips. Knead in enough of the flour to form a stiff dough. Form dough into 2 long flat loaves 4" apart on a baking sheet and bake at 350� for 30 minutes or until golden brown. Cool 15 minutes. Slice into 3/4"-1" slices and rebake on baking sheet for about 12 minutes. Cool completely.

Jazzy Razzy Green Beans

Ingredients
1 lb. fresh green beans
1 red sweet bell pepper, cut into 1/2" strips
1-2 Tbsp. Razzy Red Pepper Oil
Seasoned Salt, to taste


   
Method
Wash and trim green beans. Pat dry. Saut� beans, stirring often, in Razzy Red Pepper Oil over medium-high heat until crisp tender, about 5 minutes (brown, but be careful not to burn). Add red pepper strips for the last 2-3 minutes of cooking time. Sprinkle with Seasoned Salt. Serve immediately.
Nana's Apple Cheesecake

Ingredients
1 1/4 cup graham cracker crumbs
1/3 cup butter, melted
1/4 cup sugar
16 oz. cream cheese
1/2 cup sugar
2 eggs
1 tsp. vanilla
Nana's Apple Cake Mix
2 eggs
2 cups apples, peeled and sliced
2-3 Tbsp. caramel topping

    
     
Method
Mix graham cracker crumbs, butter and sugar; press into springform pan. Mix cream cheese, 1/2 cup sugar and 2 eggs; pour over crumb crust. Combine Nana's Apple Cake Mix, eggs and apples; spoon over the cheese cake filling. Drizzle with caramel topping. Bake at 350� for one hour. Cool completely.
Smoky Chipotle Quesadillas

Ingredients
1 cup Cheddar Cheese, shredded
1-2 tsp. Smoky Chipotle
4 Flour Tortillas
1 Tomato, diced
2 Green Onions, sliced
Razzy Red Pepper Oil
Sour cream

    
Method
Toss cheese and Smoky Chipotle together. Lay tortillas on work surface. Sprinkle 2-4 Tbsp. (depending on size of tortilla) on one half of the tortilla. Top with 1 Tbsp. Diced tomato and 1 tsp. Green onions. Fold tortilla in half. Brush one side of tortillas with Razzy Red Pepper Oil. Heat grill or griddle to medium-high heat. Place tortillas, oiled side down on grill. Brush top side with additional oil. Grill until browned on one side and then flip to brown other side (about 1-2 minutes per side) and until cheese melts. Cut into wedges, serve with sour cream. Serve with sour cream.
