ZESTY STUFFED PEPPERS

 

 

6 MED GREEN PEPPERS, TOPS AND SEEDS REMOVED

1 LB GROUND ROUND

¼ CUP CHOPPED ONION

1 (11 OZ) CAN WHOLE KERNEL CORN, DRAINED

1 (8 OZ) CAN TOMATO SAUCE

1 CUP COOKED RICE

¼ CUP STEAK SAUCE

¼ TSP SALT

¼ TSP PEPPER

1 (15 OZ) CAN TOMATO SAUCE TO POUR OVER TOP

 

IN LARGE PAN BLANCH PEPPERS IN BOILING WATER FOR 3-5 MINUTES.  DRAIN AND RINSE IN COLD WATER.  SET ASIDE.  IN SKILLET BROWN BEEF AND ONION.  DRAIN.  ADD REMAINING  INGREDIENTS, EXCEPT 15 OZ TOMATO SAUCE AND MIX WELL.  LOOSELY STUFF INTO PEPPERS.  PLACE IN 9” SQUARE BAKING PAN.  POUR TOMATO SAUCE OVER TOP OF ALL PEPPERS.  BAKE UNCOVERED AT 350 FOR 30-35 MINUTES OR UNTIL PEPPERS ARE DONE AND FILLING IS HOT.
