SPINACH CHEESE MASHED POTATOES

 

 

3 LBS POTATOES (9 MEDIUM) PEELED AND CUBED

1 TSP CHOPPED GARLIC FROM JAR

2   3OZ PKGS CREAM CHEESE, SOFTENED

2 TABLESPOONS BUTTER

½ CUP SOUR CREAM

2 CUPS SHREDDED CHEDDAR CHEESE, DIVIDED

1 TSP GARLIC SALT

1 TSP ONION SALT

1   10 OZ BOX FROZEN CHOPPED SPINACH, THAW AND SQUEEZED

 

PLACE POTATOES AND GARLIC IN SAUCEPAN AND COVER WITH WATER.  COVER AND BRING TO BOIL AND COOK FOR 20-25 MINUTES UNTIL VERY TENDER.  DRAIN WATER.  IN MIXING BOWL, MASH POTATOES AND GARLIC WITH CREAM CHEESE AND BUTTER UNTIL SMOOTH.   ADD SOUR CREAM, 1 CUP CHEDDAR CHEESE, GARLIC SALT AND ONION SALT.  MIX WITH MIXER THEN ADD SPINACH  AND CONTINUE MIXING ON LOW UNTIL MIXED.  SPOON INTO 2 QT GREASED BAKING DISH.  BAKE AT 350  UNCOVERED FOR 30-35 MINUTES UNTIL HEATED THROUGH.  TOP WITH REMAINING CHEESE AND CONTINUE BAKING FOR ADDITIONAL 5 MINUTES OR UNTIL CHEESE IS MELTED.  10-12 SERVINGS.
