OVEN BAKED OMELET

 

6 EGGS

½ CUP COTTAGE CHEESE

½ CUP SOUR CREAM

½ CUP MILD SALSA

2 CUPS MEXICAN SHREDDED CHEESE/COLBY AND JACK

 

SPRAY A 9” PIE PAN WITH COOKING SPRAY.  WHIP TOGETHER THE EGGS, COTTAGE CHEESE AND SOUR CREAM.  SPREAD THE SALSA OVER BOTTOM OF PIE PAN.  SPRINKLE WITH CHEESE.  POUR EGG MIXTURE OVER THE CHEESE AND BAKE AT 350 FOR 45 MINUTES.
