FRESH GREEN BEANS

 

2 TBPS VEGETABLE OIL OR BACON GREASE

1 PKG DICED HAM (MINI PIECES OF HAM)

1 LARGE ONION, CUT INTO CRESCENTS OR CHOPPED LARGE

SALT AND BLACK PEPPER TO TASTE

DASH OF CAYENNE PEPPER

3 POUNDS FRESH GREEN BEANS, RINSED AND TRIMMED

1 LARGE CAN CHICKEN BROTH

 

IN DUTCH OVEN OR SOUP PAN, SAUTE HAM IN VEGETABLE OIL FOR A FEW MINUTES.  THEN ADD ONION AND SEASON WITH SALT, PEPPER AND CAYENNE AND SAUTE FOR FEW MORE MINUTES, STIRRING.  ADD BEANS AND COVER COMPLETELY WITH CHICKEN BROTH.  BRING TO BOIL AND THEN REDUCE HEAT TO LOW. PARTIALLY COVER THE P0T AND COOK FOR 1-1/2 TO 2 HOURS.  YOU CAN ADD POTATOES DURING LAST HALF HOUR IF YOU WANT.  CHECK SEASONING AND ADJUST TO YOUR TASTE.
