CORN BREAD

 

1-1/4 CUPS YELLOW CORN MEAL

1 CUP FLOUR

1/3 CUP PACKED BROWN SUGAR

½ CUP SUGAR

1 TSP BAKING SODA

½ TSP SALT

 

COMBINE ABOVE INGREDIENTS.

 

1 EGG

1 CUP BUTTERMILK

¾ CUP VEGETABLE OIL

 

BEAT TOGETHER EGG, BUTTERMILK AND OIL.  MIX TOGETHER WITH DRY INGREDIENTS UNTIL MOIST.  DO NOT OVERBEAT.  FILL GREASED MUFFIN TINS ¾ FULL AND BAKE AT 425 FOR 12-15 MINUTES.
