2/3 CUP SHORTENING (Crisco)
SIFT IN 2-1/2 CUPS CAKE FLOUR
ADD 1-2/3 CUP SUGAR
1-1/4 TSP BAKING POWDER
1 TSP BAKING SODA
1 TSP SALT
1-1/4 CUP MASHED BANANAS (about 3 very ripe)
1/3 CUP BUTTER MILK
MIX ALL UNTIL MOISTENED THEN BEAT ON HIGH FOR 2 MINUTES
ADD ANOTHER 1/3 CUP BUTTER MILK AND 2 EGGS AND BEAT 2 MINUTES MORE. PUT INTO GREASED AND FLOURED 9” CAKE PANS.
BAKE 350 FOR 40 MINUTES OR UNTIL TOOTHPICK IS CLEAN.

4 SQUARES BAKERS UNSWEETENED CHOCOLATE
2 TBSP BUTTER
1 LB (4 CUPS) CONFECTIONERS SUGAR
DASH OF SALT
½ CUP MILK - I USE EVAPORATED MILK
1 TSP VANILLA
MELT CHOCOLATE WITH BUTTER OVER VERY LOW HEAT, STIRRING CONSTANTLY UNTIL SMOOTH. REMOVE FROM HEAT. COMBINE SUGAR, SALT MILK AND VANILLA. ADD CHOCOLATE BLENDING WELL. IF NECESSARY LET STAND UNTIL OF SPREADING CONSISTENCY, STIRRING OCCASIONALLY. SPREAD QUICKLY, ADDING MORE MILK IF FROSTING THICKENS TOO QUICKLY.
