Cook pasta according to package directions. Meanwhile, heat oil in sauce pan over medium heat. Stir in bacon (cook crispy); then, add onion and garlic until lightly browned. Stir in cream, tomato sauce (or tomato paste), salt, pepper and vodka. Simmer for 10 minutes.Stir 1/4 cup (50 ml.) grated Parmesan cheese into tomato mixture. Stir in penne rigate; mix well. Top with remaining cheese. You may add more Parmesan cheese according to taste, if you so desire. I usually do. Serve immediately.
Makes 6-8 servings
Note: You may use other varieties of pasta such as bow ties, rigatoni, etc., so be creative and enjoy!
